This condition will be aggrevated this year by the government requirements of grading and shipping only Number 1 and Num- ber 2 potatoes. With a Potato Flour Factory in operation all these causes are eliminated. The grower can have his potatoes graded, and store Numbers 1 and 2 for future shipment. The culls and other undesirable potatoes will immediately bring him a good price at-the factory. : s A e _ - This will also encourage the growers to increase his acre- age, being always assured a ready and profitable market. . A Potato Flour Faetory also tends to-insupé a better selec- tion of seed, removing as it does.the possibility ‘of ‘shipping blighted crops for replanting, also stimulating the growing of better seed potatoes each year which in itself is an important factor-not to be lost sight of: B Enormous Demand. for Potato Flour Unsupplied ; Practically every baker in the ‘country, the majority of housewives, every doméstic science school and espetially the United States Food Administration give ample testimony as to the food value of Potato Flour and its need in the making of better bread. AN A 2 Since the European war commenced-this demand has re- mained unsupplied. -Germany, prior to the war, had 480 Potato Factories in operation, selling this valuable product to almost every country in the world. The bread baking industry will use from 5 per cent to 10 per cent Potato Flour. It would require’1 60 one-unit factories to supply this industry with only one per cent. : At present there is only one Potato Flour Factory in the United States. ; j . In addition to the baking industries the macaroni and cracker manufacturers will use Potato Flour to improve their products. . A company now forming in Minneapolis for the purpose of manufacturing Self-Rising Potato Pancake Flour will need large quantities. » . The present wholesale price of Potato Flour is 144 cents per pound and with the exception of small amounts shipped us from Japan is almost unobtainable. The supplying of only our home market would mean the building up of an enormous in- dustry, but we have at our threshold a world market to deal with. hy We Need a Potato Flour Factory A Very Profitable Investment The Idaho Falls Factoty, the first and only one of its kind" : in America,; showed after the first season’s run in 1917 enough profit, not only to cover the original investment of $50,000, but.. .. also earned sufficient revenue to pay its stockholders a 20 per’ cent dividend. - : : : : The following is a statement based upon the first year's operation of the one-unit Idaho Falls Factory, conservatively adjusted to meet local conditions. . s The season’s campaign averages 240.days with a 24-hour day run. e We figure here on a shorter campaign of only 200 days. ' : Present carload market price of Potato Flour is from 12 2 to 141 cents per pound at the factory.
