This condition will be aggrevated this year by the government requirements of grading and shipping only Number 31 and Num- ber 2 potatoes. : s With a Potato Flour Factory in operation all these causes are eliminated. The grower can have his potatoes graded, and store Numbers'l and 2 for futiife shipment. The culls:and other undesirable potatoes will immediately bring him a: good price at the factory. 2 This will also encourage the g'rowers to increase his acre- age, being always assured a ready and profitable market. A Potato Flour Factory also tends to insure a better selee- tion of seed, removing as it does the possibility of shipping blighted crops for replanting, also stimulating the growing of better seed potatoes each year which in itsplf is an important factor not to be lost sight of. Practically every baker in the country, the majority of housewives, every domestic science school-and especially:the United States Food 'Administration give ample testimony as $0 the food value of Potato Flour and its need in the making of better bread. 2 ‘ - - Since the European war commenced this demand has re- mained unsupplied. Germany, prior to the war, had 430 Potato Factories in operation, selling this valuable product to almost every country in the world. o The bread baking industry will use from 5 per cent to 10- per cent Potato Flour. It would require 160 one-unit factories to supply this industry with only one per cent. At present there is only one Potato Flour Factory in the United States. _In addition to the baking industries the macaroni and cracker manufacturers will use Potato Flour to improve their products. A company now forming.in Minneapolis for the purpose of manufacturing Self-Rising Potato Pancake Flour will need large quantities. : The present wholesale price of Potato Flour is 14} cents per pound and with the exception of small amounts shipped us from Japan is almost unobtainable. The supplying of only our home market would mean the building up of an enormous in- dus}tlry, but we have at our threshold a world market to deal with.
