Home Cookery OQid Fashioned Pepper Pot. Chop finely two each of green pep- pers, onions and beets. Melt one ta- blespoonful of- butter in ‘a saucepan, add: the chopped vegetables and stir over a moderate fire until the butter .18 absorbed. Add a scant half pound of fresh tripe cut into small cubes and one-quarter of a cupful of blanched rice. Add two quarts of cold water and one pound.and a half of veal knuckle. Season to taste 'with salt anq celery salt, cover the kettle closely and simmer for two houps. Then add ohe, cupful of canned tomato and let mmer for twenty minutes longer ove the veal bone, cool, skim and reheat before serving, Marlboro Tart. Line .a large .agateware, pie plate iwith pastry. ' With a pastry jubber cut off long strips, ‘a scant half inch in width, of pastry. 'Mix together two cupfuls of grated apple, the grated rind and juice of one lemon, one and a half suptuls of sugar, two eggs lightly beat- en, two tablespoonfuls of meltéd bat- cer, half a teaspoonful of salt and one <cupful of thin cream. Turn this into the plate lined with pastry, wet the edges and sct the strips of pastry over, the top of the filling in two directions. Finish with a strip of paste on the edge. Let bake until firm’ in the cen- ter. Rice lce Cream. Drop a cupful of well washed rice into a kettle of boiling water, bofl for fifteen minutes, drain, drop into cold milk enough to cover about half an fnch thick, place in double boiler, cook till soft, press through a sieve or ricer, * peturn to fire, beat the yolks of three eggs with one cupful of sugar. Add to rice with a pinch of salt. Cook until thick. Cool, add two tablespoonfuls of vanilla or other flavoring, two table- epoonfuls of sherry and a pint of heavy eream, whipped. Place in freezer and freeze as usual. Hoe Cake. Three and a half cupfuls of corn- meal, two and a half cupfuls of white flour, three eggs, two cupfuls of butter- milk, butter size of an egg, ome-half <cupful of brown sugar, a tablespoonful of molasses, a teaspoonful of soda, a teaspoonful of salt. Beat until light, bake in hot oven. Serve with bacon or ‘with sweet new butter, . Potato and Ham. Into a buttered baking dish put alter- nate layers of coid potatoes sliced thin, chopped bam and white sauce. Use plenty of sauce. Make sauce with a large tablespooniul of butter melted, a large tablespoonful of flour stirred smooth and one and one-half cupfuls of milk.
