~ POUTRY FEAST FOR THE HOLIDAY BROKE RECORDS Turkey Demand Greatest for Small Bird, and Larger Ones Went Near Cost. By P. Q. Foy. (Special Food Expert Evening World.) The Christmas celebration was, Perhaps, the greatest poultry feast ever known, ag at no previous cele-| bration of this holiday was poultry so generally used, almost to the ex- clusion of most of the other kinds of meats, Early shoppers on Wednesday mroning invariably wanted turkeys, and as the day grew older the smaller aized birds were given the preference, ‘This caused many of the uptown markets to keep their buyers in the wholesale district until late at night in order to get small sized birds. A trip in the uptown section found the | | retailers all cleaned out of small vurkeys, but most of them had some large turkeys weighing from fifteen to twenty-five pounds, which they were offering at 62c to Se, although that was below the wholesale cost. The shortage of small turkeys caus # larger inquiry for geese, which were in great abundance and retailed at > $8c, although earlier in the day 0 45e was charged by most re- tailers. One large uptown market that only took orders for turkeys in advance and filled them, making a leader on «eese and roasting chickens, said: “Our sales were the largest in our history om roasting chickens and geese, but consumers were simply crazy for small sized turkeys tha would retail at from $7 down to $5 each.” A wholesale poultry receiver on Greenwich Street when asked to compare his sales with former Christ- mas markets, replied: “I handled Maryland turkeys, most of which are shipped in by the farmers, and in some cases the farmer's net returns exceeded $13 for a single bird, and this was partly true of most other sections of the United States where turkeys are produced.” Leading meat markets that did not specialize in poultry reported a rather slow business, although prices were reasonable. The best cuts of good medium steers were retailed at 35 @ 40c, in the majority of shops, while the plates and chucks were of- fered at 22 to 28c. as to cut. The decline in the wholesale prices et live hogs in the last four months has been nearly 45 per cent, while the decrease in the retail’ prices range from 80 to 85 per cent. The sale market is loaded to ca- y with desirable light fresh ry pork, that is now relatively cheaper than any other meat food, and should be used more extensively » families.
