There ms to be a general feeling among lern women that the girl of to-day either cannot or will not take the domestic and economic preparatory course for wifchood in the home of her girlhood, Xt is gratifying to know that an annu- ally increasing amount of attention is being paid to domestic training in New York schools. To get at their prepara- tory course for wifehood, 1 talked with Mrs, Jean Curothers, for some years a public school cooking teacher. Mra. Carothers has also just closed a @ummer course In Home Economics at New York University. “One great advantage in learning do- Mestic science in schol,” Mrs, Caro- thers explained, “is that the subject is Properly treated as @ science. Money on the family food, it ts of the utmost importance to learn Gietetic chemistry. Otherwise the marketing is Likely to be reduced at the expense of the family health, @n4 more money than is saved from the grocer and butcher will bo paid to the physician and druggist. The mineral matter, phosphates of lime, soda, &c., shares in forming bone and assists in digestion, FOOD SHOULD BE TAKEN PROPER PROPORTIONS. “The well regulated diet ts made up ef all these food elements in the proper proportion. For instance, one needs about 6 times as much of the car- bonya: as of protein, On the other hand, people who live chiefly on pota- toes and bread, as many of the poorer People do, are taking an undue propor- tion of starch into thelr systems. “Nevertheless, it is not necessary to depend on the high-priced meats for the tissue building protein, 1f one knows what to serve in their place, For in- @tance, one pound of cheese contain: much protein as two pounds of meat Milk, cheese, butter, nuts and olive ol! are ail nutritious foods. “If one meat dish is served a day, and ether materials supplying protein, such as milk, exgs, beans, or stmilar foods, Gre also used, there is little danger of getting too much meat or too little pro- fein.
