The Trust announced an arbitrary increase of from one to two cents a pound on fore quarters, but no increase on the hind quarters. This shows a clear dis- crimination, for one part of the beef costs the packer the same as the other parts, and if there 1s an increase in the price of cattle {t would affect the whole beef, and not just the fore quarters ‘This discrimination makes the poorer classes suffer. Kosher meat {s cut from the fore quarters, and this new increase Is likely to cause further discontent on the east side. For chuck steaks, which are the bulk of the kosher trade, the customer must pay four cents a pound more than on Gaturday, if the butcher ts to come out with a profit, and he knows that his trade will not pay squeeze, The average Increase in all kinds of inferior meats is two cents a pound and will be maintained as long 48 possible, In the general trade chuck. steaks have risen from 14 to 16 cents a pound, round steaks from 18 and 2 10 2 and 2 gents a pound, “ from 18 to 16 cents, “cross ribs" from er set, 33 to 16 cents, chuck roasts from 4 e 1.50 and 2.00 each.
