There are prospects of much lower prices in the immediate future. Ice-boxes in Chicago are so full of meat that not another quarter can be forced in, and of 18,000 head of cattle received there yesterday but 8,000 head were sold. This leaves 10,000 head to be fed and cared for until there is demand for more meat than Is now dressed. Packers admit that the demand from tho East has fallen off one-half, Stock- yard men say there has not been in twenty-five years so much beef, dressed and on the hoof, carried over night as ‘was carried over last night. United States Attorney-General Knox has refused to meet the packers of the Beef Trust. He had agreed to meet the members of a committee of the Repub- can Club, of this city, appointed to make efforts to bring about some solu- tlcn of the meat problem. The mem- vers of the club avotified Mr. Knox that they would bring several members of the trust to the conference. Knox Snubs Trust. Mr. Knox replied In a sharp letter in which he wrote: “Your action, requesting representa- tives of packing companies to meet me fs unwarranted by my letter of April 28 and was without my knowledge or any intimation to me that you proposed do- ing so until the receipt of your letter of 2th. © * * I regret that you have as- sumed to arrange conferences which | misrepresent the Government position.” Glut of Beet, Many thousands of cattle are now on the way to Chicago and cannot be headed off. They seek a remedy, and they generally find one. The agitation of the meat question is just now uppermost in the minds of the people. At first, they thought it necessary to denounce the Meat Men, On second consideration, they began to think that perhaps an advance in the prices of meat was a good thing after all. It is an old saying—and a true one—that every evil has its accompanying blessing. With the prices of meats advanced, the habit of meat eating is diminishing. This means the upbuilding of the health of the people, for it is a scientifically known fact that our excessive meat eating endangers our health. Prot, Atwater, the highest American authority on tood, says: “You should eat less meat.” Fat The New York Times utters a profound truth when it says, ‘‘A consensus of medical opinion would show that conditions inducing the average American to eat less meat would be beneficial, rather than hurtful, in its influence upon the public health, especially in summer.” Presto: This is the blessing in disguise. Maybe the high price of meat is doing a greater thing tor humanity than anybody imagines. | At any rate, the high prices have made people think, and their thoughts are turning to a substitute for meat.
