The beans were used by the Aztecs, the aborigines of Central America, not only for a beverage but also for money. Their value depended upon their size. The history of cocoa is part of Mexican mythology, and enters into the history of the country. The sacred tradition of the Indians of Mexico is that we are indebted for the introduction of the cocoa bean ;]on earth to Divine Providence. Quet: walcoatl, the god of the air, was commissioned to convey to man the seeds of the cocoa tree, one of the few plants growing in Eden for the food of the goda. The cultivated cocoa tree grows to a height of 25 feet. When the trees gre three or four years old, they commence to flower; after they have once produced fruit, regular rops may be expected for fifty or nore years, The flowers are very small, and ire borne on the main stem or on yranches, in clusters or singly. The »ylossoms are a@ bright red, and in jue season are succeeded by angu arshaped pods, green at first and \ yellowish-red when ripened. The fruit pods contain the precious cocoa beans, and present a curious spec tacle to visitors from temperate climates, The pods gre picked and sorted into grades acconting to Factory «izea, Shelling or breaking of the pods is accomplished by a knife wlit, dexterously made by the na- lves. The beans are then spread on drying-floors, and constantly turned to prevent over-heating. The beans are then ready to be packed in sacks for shipment. THE WASHINGTON CHOCO. The meat fs ground and mixed with other ingred- lents to make a@ delicious cocoa and ground chocolate for drinking pur- poses and idings for cakes. The ground chocolate 1s put up in one- half pound, one-pound and three- pound cans, Bitter and sweet choco- late cakes are also manufactured in one-half pound sizes.
