When a young lad Smile y he started in to get an education at a boy’s school, working two hours a day in the kitchen to help de fray the expenses of his tuition. eS At the age of 18 he went to St. Louis and during the time of the Sf. Louis Exposition hired out as a guide, and escorted such distinguished persons as Tiffany of New York, Gould and Schwab. He attended many of the large expositions over the country and established eating places on the grounds. His remarkable ability and success in serving meals to thousands of visitors attracted the attention of Fred Harvey of the Harvey System of Restaurants. Young Boldt later became associated with the Harvey Sys- tem at Albuquerque, New Mexico, on the Santa Fe. In 1909 he severed his connection with the Harvey System and attended the Lewis & Clark Exposition, opening a large restaurant on the grounds. At the close of this exposition he came to Seattle and be- came interested in the restaurant and bakery busi- ness. J. R. Boldt’s ability for the handling of large crowds has been many times demonstrated. On two days’ notice he was asked to serve 3,000 Odd Fellows. No sooner said than done, for J. R. Boldt was used to handling large crowds, and they all knew it, but won- dered how he would do it. On the date set there appeared a large tent, with big ovens in an adjoining tent, and all had the ap- pearance of a circus in town. Here Boldt brought some of his exposition experience into good use, and the 3,000 Odd Fellows were served as they had never been served before. Then came the Shrine convention, and a big feed was to be served to the thousands of Shriners. Who could do it on short notice? Some one said “Boldt.” a 7 ~— +. hae The big feast was staged at Woodland Park on record ue : ys “A time. No one went hungry. There was plenty of antiien everything, all served in style and precision. Many times has J. R. Boldt demonstrated his ability to serve large crowds successfully. The banquet which was tendered to President Wilson while tn Seattle to review the fleet, when places were laid for 1,600, was the achievement of J. R. Boldt. Yea, do we say he is the banquet king of Seattle? We do! J. Ro Boldt now controle two of Seattle's leading retsaurants and bakeries, which bear his name. Good, wholesome meals, well cooked and served, have won fame and distinction for Boldt’s Restaurants. “I believe tn serving generous portions,” sald J. R. Boldt. “It's & good investment.
