Delicious Beyond Words Why?— HE exceptional care exercised in growing and gathering the crops, the expert knowledge brought to bear in blending and packing, the freedom from artificial coloring matter, facing and other adulterants, give to Ridgways Tea a flavor that is matchless— truly superb—and such remarkable strength that but half the usual quantity is needed to the cup. The final step in the preparation of tea leaves is the firing or drying process. It is here that the tea is most liable to acquire its bitter taste, as, if the leaves are scorched or any moisture is left in them, it pro- duces ‘a chemical change which spoils the true tea flavor. Ridgways Téa is dried by spreading the leaves on trays in a drying machine, attached to which is an exhaust fan which draws the hot air forcibly through the trays. This process is hedged about by safeguards which absolutely prevent the leaves being scorched or any moisture being left in them. ' All leaves are thoroughly and uniformly dried. Ridgways Tea is strong in the sense that a very small quantity will go_a long way and the reason for its strength lies in one very important operation. In order to break open the minute cells con- taining the essence of the tea, the leaves are subjected to a process called “Rolling and Twisting.” This operation is ordinarily done by hand, a crude and unsanitary method, which leaves many of the cells unbroken. Ridgways Tea is rolled and twisted by an ingeniously constructed machine, a cleanly process which breaks open every cell. Thus when hot water is poured on Ridgways Tea the full strength is at once released and yet its mild and delicious flavor is retained. Try a package of Ridgways today.
