It is their business to examine the quality of the different food products, and to suppross the salo or those found impuive and unwholo- some, and all will admt that thoy have por- formed their duty without fear or favor. At arecent examination by a legislative committee to determine the qualities of the various baking powders sold in Minnesota, state chemist and analyst 1o the food and dairy commissioner, D, Benjamin I, Drew, gave the following evidence: Ques.—Dr, Drew, I seo by report of the dairy and food mission of this state that in maki aualysis of the various baking powders of this country, you report as a result of your worlk that the Roval baking powder contains and gives off 1 baking a groater per cont of carbonic ncid gas, leavening gus, than any other baking powder made: is that true! Ans—Yes, sir, that is a fact. (Ques. —Dactor, you also found from exper- iment that the Roval baking powder will keep longer and retain 1ts qualities bettor than any other powder made, did you not? Ans—Yes, sir, [ think it does Ques--Now the two most desirablo ities in baking powder aro the carbonic acid gas it contains aud and the length of time it will not! Ans—Yas, sir. Ques. —~Then the Roval baking powdor, possoesiug thieso qualitios, is the best pow: der made, is it not! Ans—Well, that would be the natural cone clusion. Ques— well, that is the fact, is it nott Ans—Yes, I think it is. I cousider it one of the best baking powders made, - Wind Cave Specimens. John Franeis, general ticket agent of the B. & M., has received a lot of fine specimens of stalactites taken from Wind cave, a large cave in the Black Hills, ashort distauce from Hot Springs. This cave is one of the won- ders of tho Black Hills and is of unknown size. Some two hundred chambers of differ- ent size have been explored and muny othors are known to exist.
