There has been an open discussion o late among millers which is particular 1y interesting in cities where flour mill ing is one of the chief industries whether the flour as milled now is a fine a quality as ‘it was many years ago, when patent flour was first milled in Minneapolis. Most of the millers in- sist that modern flour- is su any that was ever milled. wh especially the old-timers, claim that wheat flour as manufactured by the ‘WashburnéCrosby Co. vears ago. was 80 good as to make improvement a dif- ficult matter. The Washburn-Cresby Co. has decid- ed the question emphatically. and all through chance. and the modern Hou comes out a winner by several shades | of whiteness. It is explained by those | who, are familiar with the hisfory of | the company that 14 years ago a | scheme was thought -out for packing flour in cartons for domestic use. | The idea was thought to be so good | that a large number of four-pound car- | tons were ordered manufactured and | the Washburn-Crosby flour put up in that shape. 'But ‘t was too great a,de- parture from custom and t carton idea at that time was not thought to | be practical. So the new -scheme was | abandoned. The other day one of those fdur { pound cartons, packed 14 years ago, ! was brought to light, and it was at | cnce seen that here was an opportuni- ‘ ty for comparison with the flour being milled at the present time. A test showed that the flour had kept well during ‘he long period of 14 years, and had only deteriorated slightly in a | minor function.
