6 FINANCIAL AND COMMERCIAL. MONEY MARKET. Friar, Nov. 30—$ P.M. ‘The poa.arrival of the steamship Atlsn'ic has « de- reasing influence upon the stock marxet. This morning ‘the operations were only to a moderate extent, and gene- wally at lower prices. At the second board there Was a very limited busine-s, but at higher prices. The strong westerly gae may keep the steamer out « day or ‘two longer, in wnich event we may ‘ook for a dall rime. ‘The arrival of the steamer George Law, with the Califor- nia mail and treasure, had no effect upon the market. Hor gold has arrived too late to affect this woek's bank statement. ‘The Michigan Contra) Railroad Company earned $88,- 031 60 in the third week in November this year, against $61,699 68 tor the same week iast, showing an increase of $16,181 91, A telegraphic despatch from Boston states that an in- junction has been served upon the Grovers’ Bank of that city, This ts fatai. We understund that the New York Central Railroad Company have leased the Oswego and Syracuse road for a term of years. ‘This is another million or so added to the liabilivies of the Central Company; tor the payment of interest on tha’ smount must be made, whether the lateral road earos it or not. In this way the Centra Company is gradually avsorbing ‘he small lines of unpro ductive reilroad in the northen and western parts of the State. This leasing the Uswego and syracuse road has completely adsorbed the political power of Oswego. It wilt hereafter be fur the inerest of the leading politi- class cf that place to sustain the Central Company, aud the power of that corporation in the Legislature has, therefore, been increared. The construction of the Bing- hamten and Albany road, and tho Oswego and Troy, is strongly oppoad by the Central Company, and we have no doubt the arrangewen' just made with the Oswego and Hyraouse road in partinily with a view to atop, if pos- sible, farther movement ia the roy Hue. At that time—Oct. 1854—the outstanding in- come bonds amounted to $2,649,000, and the flcating debt to $2,525,660, making a total of $5,174,669. ‘The lean pro- posed for at that time yielded $3,200,090. Tais, with tue bonds of 1883, on hawd, made the aggregate available resources about $4,000.000. The directors knew very well im October, 1854, when the circular alluded to above was put fortn, that the four million loan would not net more than 80 per cent or $3,200,000, and they also knew very well that the proceeds of the loan and the balance vf 1883 bonds would not pay off the {n- ome bonds and floating devt. At that timo we showed thats floating debt of at least $1,000,000 must remain after using all the company’s available means. .The di- rectors of the Erie Raileond Compiny are all highly re- aprotable men, and it may be porfectly honorable for them ‘to put forth statements wuich they knew at the time to be false; but if so, they have « code of morals of ‘& very convenient character, and one on!y in operation in ‘the affairs of incorporated companies. Venison is beginning to come in, and sells by the saddle for eighteen pence per pound, and by retail for twenty cents. A few weeks more, and it will by in ia large quantities. There are some squirrels in market, which command # much higher price than formerly. ‘There is no accounting for taste, but to our mind they look too much like overgrown rats to be palatable eating. Butter has advanced in price, nor is there any prospect of a decine. Tais is a very busy searon with batter merchants, as large shipments are made immediately bo- fore the closingfof navigation. Fggs are still outrageous- ly dear. ‘here is no noticeable change in fruit or vege: tavies. FISH AND FISH STORIRS. ‘One of our reporters had a conversation om pisestorial subjects with Mr, John 8, Hiscox, a wellknown fish dealer in Washingion Market, and as a number of interesting facts wore elicited, pechapa it would be interesting to re. produce the substance of the interview here :-— Rerorrsx—M>. Hiscox, you know a good deal about fish, and perhaps would have no objection to letting the facts in your posseasion be made public. What fish are sold moat in New York ? Mr. H—Coafish. It is the cheapest and most abundant fish we have. It runs from five to six cents per pound the year round, has not much bone, and is, withal, rather @ pleasantly flavored fish, It is always in market—great quantities are caught off Sandy Hook. R.—Where is mest fish old? Mr. H.—In Falton market. All the wholesale dealers keep there, We sell more oysters at retail here, though the boats generally lay at Canal street dock, R.—Tell ws adout perch fish, Mr. H.—Perch is @ fine fish, and to my mind saperior to either striped or sea bars, [tis in season in fall, and gat quanticies of it come from Rhode Islaud, The trafic must be a valuable one to the fishermen of that State, A good deal of striped bass comes from that State —_—-~ and provided for, The pawenwe en also, but is gleo caught im the bays and inlets along the coast of Long Island, The large is much more palatable then the small perch. R.—How about halibut? Mr. HA good fish fer hotels and housekeepers, It bas 20 bone worth mentioning, is cheap and palatable. Tt comes from Deen East and is out of season only about four months in the year. R.—Is there much trout sold in thie market Mr. B.—Not much. ‘here is @ great deal ofinforior trout sold, ‘the fact is, that which comes from Lake Erie and the Western lakes isn’t worth eating. The only really fine trout comes from Lake Ontario; and from its yellowish color it looks as though it amalgamated with ‘the salmon, and from that circumstance no doubt derives ite name. R.—I see a good many smelts in market, Mr. H.—Yeos. They have just come in, and thongh bony, are very sweet eating. We seil a good many of th+m. Those now im market eome from Mystic and Ston- ington Point, where they are caught in vast quantities. They average from ten to twelve cents per pound. It is something to know how to cook fish properly. Now, to my taste, sturgeon is good eating; bat the difliculty is, people do not know how to prepare it. I parboil it; that is, soak it in scalcing water; a process that serves to take ous the fatty matter, the taste of which is geve- rally offensive. After the parboiling I cut it into steaks and fry it, and a person not acquainted with sturgeon in ‘that form would mistake it for veal cutlets. It is acheap summer fich, and very plentiful in the North river. R.—What kind of eels make the best eating? Mr. H.—The large silver or fall eal; it is @ very fine fieh, and can be caught in great quantities in the mud along Sheepshead bay, Coney Island, and on the shores of Staten Island. They are known by their white bellies, Thos average 11 and 12 con's per pound. I don’t think much of other eels. R.—What would be a good place for an amateur to catch crabs? Mr. H.—Gowanus bay, generally, contains a good many; and all along the Jersey flats there is good crabbing. Those who fancy being out on the river this weather may ca‘ch a hundred crabs in two hours at either of those places. Some pevple prefer crabbing to fishing. You know they are caught by means of a piece of meat tied to a string, which the crab attaches itself to, and on being drawn to the surface in fished up with a hand net, It requires some dexterity, and the excitement of catching and securing them before they can escape makes the sport interesting.’ I prefer waiting until the dead of winter, when the crabs are frozen in the mud, They can then be raked out, and at that time of the year they are in excellent condition; indeed, to my mind, crabs partake somewhat of the nature or oysters, and are not fit to eat in summer time, but when eaten in winter cannot be deemed unhealthy. It is no- ticeable that negroes are very partialte them, and indeed to all shell fish, Perhaps balf the crabs that come to the city are bought by colored people, Here the conversation was cl THE RETAIL PRI The following list has been carefully corrected:— MEATS.
