To Cold-Pack Peaches Choose firm free-stone peaches, wash and dip in bolling water for two minutes. Plunge into cold wa- ter and slip skins. Cut in halves and remove stones. Pack in steri- lized fars to within 1-4 inch from the top. Pour over syrup to cover peaches. Half seal. Put into hot wa- ter bath and process for 20 min- utes, counting the time after the water begins to boil. Remove from boller, seal and turn upside down to cool.
