Of course the wild ones are a bit seedier, but they are sweeter, too. This recipe for apple and blackberry jam has the delicious blackberry flavor without the seeds. Blackberry and Apple Jam. Four pounds apples, 2 pounds ber- ries, 4 pounds sugar. Look over berries, Put in a crock with and let stand over night. In the morning put berries over a slow fire and simmer until the juice is extract- ed. Pare, core and slice apples. Put in preserving kettle with the strained juice of the berries and the rest of the sugar, Boil gently for three-quarters of an hour. FPour into serilized jars and seal while boiling. Blackberry Jam. Four quarts berries, 1 lemon, pound for pound of sugar and fruit. Pick over berries and mash In the wash and drain. 2 cups of sugar in sugar and cook slowly for an hour. Pour into sterilized cans and seal while boiling hot. Blackberry Shrub. Blackberries, cider vinegar, sugar. Put berries in a crock and cover with vinegar. Let stand over night, Crush berries to extract the juice. In the morning strain and measure juice. To 2 cups of juice add 2 cups of sugar. Bring to the boiling point and boil ten minutes. Bottle and seal while boiling. This makes a very refreshing drink served with shaved ice.
