One cup white sauce, 1 tablespoon lemon juice, 3 egg yolks. 2 table- spoons butter, salt and pepper. Make white sauce as usual. Add the egg vyolks well mizxed with 3 tablespoons water. Stir over hot water till the sguce thickens, but do not let boil. Add lemon juice and 2dd Dbutter bit by bit. Season with salt and pepper. Chard Leaves As Spinach. Wasgh leaves through several wa- ters. Put on to cook over a slow fire in a tightly covered kettle. The chard will cook in its own juice just as spinach. Cook until tender, about forty-five minutes.
