Lyonna Tripe. 1 pound boiled tripe, 2 tablespoons butter, 1 medium-sized onion, 1 des- sert spoon minced parsley, 1 dessert spoon vinegar, salt and pepper. Cut tripe in pieces 2 inches square. Melt butter and add onion minced. Fry till onion is tender and lightly browned. Add tripe, parsley, s=salt, pepper and vinegar and shake over the fire for a few minutes.
