When hot, stir in the butter and the yolks of the eggs. Cook until the mixture thickens. Line a deep pie dish with pastry, making the ex- treme edgo of the crust quite thick. Pour in the apple mixture and bake in a moderate oven till set. Beat whites of eggs till stiff and drv with 4 tablespoons of sugar and spread over the top of tho pudding Brown slightly in a hot oven.
