This will make about elght servings but will not be too much for an ordinary fam- ily dinner for four people- Have the steak “scorgd” by the butcher. This saves the cook work and is no trouble at all for the butch- er. Put the mcat into a large frying- pan or a flat baking dish thgt may be sent to the table. If a gravy is made the meat will have to be cogked in the frying-pan, but if not it Jooks more attractive served in the dish it was cooked in. Make a paste of the following in- gredients: 1-2 teaspoon mustard. 3-4 teaspoon salt. 1 teaspoon sugar. 3 tablespoons vinggar make a paste. Spre-\d the paste over the meat ) Slice an onion as thin as possible and sprinkle these shadowy pieces over the steak. Put 1-2 cup boiling water in the pan and bake 1% hours. Dot with butter when done and serve. If a gravy is wanted melt 1 table- spoonful of butter in the pam in which the meat was cooked. Brown 1 %tablespoons of flour in the butter and add 2 cups of water, stirring con- stantly. Fhere will be apsolntely no taste of the vinegar and mustard mixture, but the meat will have a delicious flavor and be so tender it ¢an be cut with a fork. A’ flank steak is so frankly tough that unless the fibers-are broken in some way it is imposgible to serve. Of course, vinegar softens the tough fiber and makes its responsive to the heat of cooking. Mpre long gcooking will not make flank stpak tender. And another thing, flank steak has no bone or grisle, therefore no waste.
