Cut a head of cabbage into sixths Add 1-2 teaspoonful of soda to a kettle of boiling =alted water. Put in the cabbage and cook 18 minutes un- covered. Dinner—Cream of lima bean soup, roast dusk, baked sweet potatoes, scalloped caulifiower, grapes and pears, toasted crackers, cheese, cof- fee. My Own Recipes. A mixed cheese could be nsed with | the crackers for a change. Two ounces of Roquefort, added to a cream cheese, give a Roquefort taste, and the hole in one's housekeeping allowance is not unreasonable. Finely-chopped pimentoes and the yolk of a hard- boiled egg may be added. Spiced Veal. 2 1-2 pounds of Jean veal. 1-3 pound salt pork. 1-2 cup cracker crumbs. 3 egss. 1-2 cup tomato catsup. 1-2 teaspoon pepper. 1 lemon (grated rind). 1 cup water. 2 tablespoons butter. Chop meat very fine. Beat eszgs well. Mix first seven ingredients. Mold the meat into a brick-shaped loat. Roll in fine cracker crumbs. Put in a small dripping pan and bake an hour t> an hour and a half in a moderate oven. Baste with the water and butter. This may be prepared the day before and sliced cold. o] Salad. 1 1-2 cups diced celery. . 1-2 cup diced apples. 1 large green pepper. Lettuce. . French dressing. Wash pepper and remove seeds and tough white fiber. Shred or cut into thin circles. Mix celery and apples with dressing. Arrange on lettuce, add pepper and serve. A salad that is mixed with French dressing should not be allowed to stand after mixing. The roast may be rare or well done. The after-dinner story must be both. MARY. Sister voters: Read the N. Y.
