The new method con- f¥ists in freezing juice pressed from apes into solid ice, cracking this fice into pieces the size of a walnut fena whirling it in a tentrifugal ma- [Shine such -as is used in separating 1 molasses from the sugar or sy- rupy portion of the grape juice to separate from the crystalized water and to fly out into the recelving chamber of the centrifugal. By this method the grape juice is quickly re- dued by the elimination of water to one-fourth its volume so that the syrupy content of a gallon of grape juice will make a quart of -concen- trated ' grape syrup. Experiments in making the product showed also that in the freezing and ¢entrifugal izing a large part of the acid of the grape juice, which is in the form of éream of tartar, is left behind in crystals in the ic8 in the centrifugal basket. After the syrup has been con- centrated /it is sterilized by heating and can then be kept 'indefinitely. Aside from its special flavor the new grape concentrate, it is believed pos- sesses certain ~commercial advan- tages in .that its reduced bulk makes it cheaper to store, handle, and ship. Concord Grape Syrup. SUPERDREADNOUGHT ARIZONA, Washington, June 7.—The thirty- ninth battleship built for the American navy since 1892 will take the water June 19 next when the superdreadnought Arizond slips from the ways at the New York Navy Yard. Compared to the first Ameri- can battleship, the Indiana, launched in 1893, the Arizona will be nearly iwice as long, half again as wide and of three times as great displacement. Against the Indiana’s four 13-inch guns and eight 8-inch, the Arizona will carry twelve 14-inch and twenty- two 5-inch rifles, the same armaméent as her sister ship, the Pennsylvania, recently launched at Newport News.
