It goes well with chicken and just as well with veal. Wipe a three pound shoulder of veal with a damp cloth and either pressure cook or simmer until ten- der, salted to taste. Cut the meat into one and one half inch cubes. Wash one half pound mushrooms and cut in half. Saute one half cup chopped celery, one half cup chopped onions and the mush- rooms is one fourth cup butter or margarine until light brown. Set aside. Mix two tablespoons flour with two tablespoons water to make a paste. Add to two cups of veal broth with one teaspoon salt and a dash of pepper. Cook and stir un- til thickened. Place meat, sauteed vegetable and gravy in one and one half quart casserole. Bake in| oe. The reduction was City Hall. Keen expressed his appreciation of the cooperation shown by A. W. | Castro, manager of the theatre, in agreeing to the special rates. | It was also announced that the way has been paved for Key West’s participation in the National Golf Tournament May 23. The play of a national champion is broadcast over a nation-wide hookup and local pion. Key West participated in the tournament last year.
