It does not cost any more to cool the air in a larger chest, nor will one of fair size cost much more to buy than a very small one. An all-metal refrigerator is better than one made of wood to use in a place where there is much humidity. It is also very impor- tant to learn all you can about the manner in which ‘the refrigerator is insulated. as it is upon this feature that much of the efficiency of any re- frigerator is based. A well insulated ice chest prevents undue meiting of ice. but provides for the perfect keeping of food. Also don't overlook the drain- | ing facilities when choosing. It is much | easier to keep a chest with a good drain clean and sweet than one in which this feature has been overlooked. The main object in using a refriger- ator is to save food. not ice, so that real economy consists in having well insulated walls. in keeping the ice chamber well stocked, in opening the doors only when absolutely necessary and for as brief periods as possible, and in putting nothing into the re- frigerator that does not, so to speak, | pay its way. Never place hot puddings, ' custards and other food in a refrigera- tor 1o chill. Naturally, the high tem- perature of these foods will have effect | on all the air in the refrigerator. and the jce will melt entirely too rapidly besides, it is not good for food to be cooled this way. All food should be cooled thoroughly and gradually before being placed in the refrigerator. Do | not use ice to chill such things as the thick paper wrappings of parcels from the market, the tops of carrots or beets, or the outside leaves of lettuce, which will all be discarded later. Never leave the refrigerator door open even for a second.
