It makes a de- licious_dish. CANDIED . SWEET POTATOES This is a favorite Southern dish. One-half dozen medium-sized sweet potatoes, two cups white or brown sugar, one cup hot water, one tablespoonful lemon juice or vinegar, one tea- spoon cinnamon, one-half cup butter, and one teaspoonful salt. Partially cook the unpealed sweet potafoes in boiling water. Cool and peel. Slice one-fourth to one-third inch thick length- wise of the potato, Put in layers in a baking dish. not packing too closely. Make a thin syrup of the sugar, water, lemon juice and cinnamon, cooking for about ten minutes. Add the butter and salt and pour over the potatoes. Put in a moderate oven and bake until the potatoes are clear and somewhat gummy. These may be made en casserole with the addition of a few raisins. Marshmallows may be added a few minutes be- fore taking from oven.
