It is particularly appropriate for restaurant wear, but would also be suitable for more or less formal after- noon teas or receptions. Ginger for Flavor. Ginger Snaps—Cream half a cup each of butter and brown sugar, add a cup of molasses, a teaspoon of gin- ger, a teaspoon of soda dissolved in warm water, and enough sifted flour to make a stiff dough. Roll very thin, cut out and bake in a quick oven. Ginger Ice Cream—Sweeten two cups of cream or milk, add half a cup of chopped preserved ginger and two or three tablespoons of ginger sirup. Freeze. A few chopped-nuts may be added if desired. Ginger Cream—Chop fine half a cup of preserved ginger, mix with half a cup of sirup and add half a package of gelatine which has blen soaked and dissolved. Add a pint of cream whip- ‘ped solid and a little more sugar if required. Mold, chill and serve with whipped cream flavored with ginger sirup. Ginger Bread—Two cups of mo- lasses, ground ginger and cloves to taste three and one-half cups of sift- ed flour, one teaspoon of cream of tar- tar, one teaspoon of soda, dissolved in warm water, one cup of butter, one cup of milk, four eggs. Mix all to- gether, adding soda last. Beat well, pour into pans lined with greased pa- per and bake in a slow oven. Do not fill the pans more than one inch deep and bake twenty to thirty minutes. Test with a broom whisp. Two tea- spoons of Royal baking powder may be substituted for. the cream of tar- tar and soda. Ginger Soufle—Four ounces of corn- . " Planning a Home. Remove from the fire; beat in, one at a time, six yolks of eggs. Beat the whites to a stiff froth and mix care- fully with the batter. Fill one large, or several small, well-buttered and heated baking dishes; set in a quick oven; bake about twenty minutes and serve immediately before it falls.. Raisin Leyei®uke. © | Put one quart of raisins in a small| stewpan and cover them with cold | water. Cook slowly for one-half| hour, then drain and cool. Beat one ! cup of butter to a cream, and then beat two cups of sugar into it, add two grated nutmegs and beat a little longer, add the yolds of five eggs well - beaten, dissolve one-half tea- spoonful of soda in one cup of milk and add this to the beaten ingredi- | ents. Add four cups of flour and stir in the well-beaten whites of five eggs. Spread the batter in thin lay- ers in cake tins and sprinkle raisins upon each layer.
