From the Cornhill. For alf kinds of flat fish London is the very finest market in the world. Nowhere are these delicate and justly prized fish to be had in such quantities or in such uni- ferm and constant supply. Soles, turbot and brill are in season in every month in the year; they never go out of con: a the supply never fails. Of the kinds, w2 mention plaice and flounders else- where; but it should be remembered that in the months of February, March and April they are out of season and y worthless. Among the “prime” 5 fashion, or change of taste, has recently r2- arranged the order of precedence--and of price. Formerly turbot, by general consent, held first place. Turbot end lobster sauce was so much a n2cessary part of a dinner party that special “turbot plates” were made to hold the fine fish—which, accord- ing to custom, appeared on the table. athe splendid and very large plates made ir. China in the end of the last ceatury as part of dinner s:ts for tne English market Were destined for this purpose, though now soid as ccstly bric-a-brac. Sole was much jess expensive, and brill was a cheap fish. Now sole is the dearest of all fish except salmoa end trout, averaging from Is. 64. to per pound, whil2 brill has so risen in popularity that there is seldom a difference cf a penny per pound between the price cf this fist. and that of turbot. Another flat fish much prized for years in the north of England is gradually finding its way into the London fish shops. This is hailbut, the largest of the flat fish. They have been caught weighing as much as 320 pounds, and 60 pounds is a common size, As t fish is go large, it is usually sold in steaks. The fiesh is white and firm, and not wi out flavor. But it has havdly che “quality to stand alone. SS The Duke of Marlborough: is one of the most enthusiastic of amateur firemen, and takes a keen interest in the Fire Brigade Union.
