From the St. Louis Globe-Democrat. “There is a terrapin farm near Mobile, Ala.,” said T. E. Swift of Mobile to the cor- ridor man at the Southern: “There are but two of these farms in the United States, the other being in Maryland, and it is visit- ed by hundreds of people almost daily dur- ing the summer season. The diamond-back terrapin is greatly in demand among epi- cures, and while there are few restaurants that do not claim to supply terrapin stews, there are very few that really do, on ac- count of their scarcity and high prices. The farm is surrounded by a high fence, and canals are cut through it with narrow cidges of land between. Every terrapin that is caught off the coast is taken there, and fishermen are constantly kept at work hunting for them. The ends of the canals are so secured thai it is impossible for the terrapin to escape, and they breed as rapid- ly in the farm as they do in their native haunts. Several thousand of them are con- stantly kept on hand, while from 10,000 to 12,000 dozen are sold anually at prices from $6 to $10 a dozen, the market being princi- pally in New York and Philadelphia, from which points the entire trade of country is supplied. At meal times the sight of thousands of terrapin scrambling up the banks to get their food is a most unique and interesting on: Pure food exposition every afternoon and a at Convention Hall.
