This was found to be unremiera- tive as a commercial product, and later manu- facturers have added to the fat (itself not al- Ways of the purest quality) from ten to thirty per cent of a vegetable oll derived from the pea- But, which. belog cheap, white, inodorous and dasteless, effectually serves the purpose of adal- teration, The report of the cormmmittee 1s agalast the use of margarine In the asylums, and Is also adverse to its general use as a substitute for butter. The margarine as originally prepared 1s no longer an object of commerce, being too dear. That which Is actually tn use 1s an indus- trial product open to varlous frauds. Vegetable Olls are especially introduced, and If It 1s easy to decide by chemical analysis whether a given Product consists of butter or margarine. tt Is Very difficult to aftirm whether this margarine 4s pure or mixed with ofls, and vegetable olla are Known to be more diMicult of digestion than animal fats. It will be seen from the above that they man- ge these things differently tn France. When our Congress tustituted an inquiry in the mat- ter and sent a committee of investigation on north, the margarine manufacturers of New York captured them, and dined and wiped and ‘Whiskied them until they didn’t know animal fat from fusti oil or apy other oll, and they came back and reported oleo-margarine to be altogether lovely, in fact a little better than genulne but- ter. The French margarine men were not smart; but perlaps they knew better than to try the New York plan upon the doctors there. Mr. Rae, of the London Doiy News, was one of the first to treat us fairly, and in “Westward by Rall” he com- mented in a generous manner on our faults and our virtues, and set an example to those who should follow him which has been productive of Good results. Mr. George Jacob Holyoake, who bas contributed several articles to the Nine teenth Century concerning us, has, by his fatr- ness and impartiality of treatment, perpetuated ‘the esteem fn which, as a reformer and thinker, abe was held by the American people. Although nearing his seventleth year, Mr. Holyoake has Shown by his comments on our methods of living and of working out our destiny that nis Observant eye Is not clouded nor his judgment ‘warped by the prejudices which seem to be inseparable from a long life spentia England and the viewing of things foreign from a British Standpoint.
