Their main ob- ject is stated by some of them to be to bring about the old time custom of counting 13 loaves to dozen, in other words, giving a “bakers Dracipay Carouge grocers Nast and principally through the grocers’ hands, an they make a cent a loaf profit. There are in the city about 150 bakers, and er average 750 loaves per day or a total of 112,500. About 30,000 loaves are sold direct to families at retail price, and the remainder 82,500 loaves to grocers the profit on which to the middie men $825. Under the law the loaf ee weigh a pound, and it is claimea@ that the bakers cannot sell it at the present price of flour for three cents; but if they covid sell direct to families, rot which now saving the p — the grocers, they would be able to give weight, wel ‘well baked bread and the profit of i cent on each loaf—about $2 50 per barrel— would enable them to use a better quality of flour and to pay their workmen better wages; in fact, to give a full baker’s dozen of better quality loaves for half oe dollar.
