It mast not be forgotten that pork ts apt to contain certain parasites, viz., the eysticerus, which produces tapeworm, and the trichina spiralis. If the eyes are bright and the feet supple in ponliry and birds, they are fresh; but if these signs are absent they are either’ diseased or stale. Fish shonid always be used as fresh as pos- sible; when in this state the eyes are bright, the gills of a fine red color, and the body stiff. It would bea great improvement if fish were always kept alive at the stalls.
