The rest, or 46 parts out of the Lnndred, contain in large’ proporv.ons nitroge- nous matters, fats and minera! salts, demonsira- bly useful for the nourishmentof nerves, muscles aud bones. In other woras, by our mode of mak- ing coilee we lose more than half its available and valuable constituents. Considering the tons of coffee imported every year, this wholesale wastefulness becomes a matter of considerabte magnitude, this of course only on the condition that the rejected matter can be used with profit. That it cau be so used is shown by the Turks, tho make coffee as we do chocolate. The eoffee, fhely powdered, is drank with the infusion. In this way all thestimalating qual- ities of the infusion are secured, with the full aroma and all the nutritious elements of the berry. Itis perhaps needless to add that, for use in this way, the cotfee must be reduced t> an impalpable powder. To those unaccustomed to use oriental coffee, the limpid infus.on may seem much tobe preferred. As @ stimulating drink, it is undoubtedly preferable, but the good qualities of coifee are not exhausted with the intasion; and as @ matter of economy, it may be worth while to sacrifice limpidity for nutrition. Besides, as one becomes accustomed to thick chocolate and learns to like it more than the clear infusion of the cocoa bean, 80, it is claimed, the taste for cafe al’ Frientale may be acquired, with a corresponding improve- ment in the breverage.
