THE EVENING STAR. PINE APPLE PRESERVE. Twist off the top and bottom, and pare off the rough ontside of pine-apples; then weigh them, and out them in slices, chips. or quarters, Or cut them in fonr or six, and shape cach piece like a whole p!ne-apple; to each pound of fruit at a teacup of water; put itin a preserving- ettle; cover it, and set it over the fire, and let them boil gently until they are tender clear; then take them from the water, by stiek- ing a fork in the centre of each or with a skimmer, into a dish. Put tot! er white und for each pound of fruit; stir it until ithe til diseelved: then put in the pine-apple; petri be kettle, and let them boil gently until transpsrent throughout; when it is so, take it out, let iteool, and put itin gises jars aa soon asthe sirup isa little cooled, pour it over them; let them remain in a cool place until the next day, then seeure the jars as directed previously. Pine-apple done in this way is a delicious pre- serve. The usual manner of preserving it b: put itinto the sirup without first boiling it = t little better than sweetened leather. CANARY BIRDS. — Having had much trouble in protection canary Birds from the attacks of the insects that infect them and the cages, I learned the following simple method of destroying these whieh will no doubt be a useful piece of formation to many of your readers. By jscing every night over the cage a white cloth, Re insects gather upon it, and in the morning ay be seen by carefully examining the cloth. Thay may thus be soon removed, and then all that is necessary is to thoroughly clean and varnish the cage. NEW WAY OF BOILING PISH. The sddition of a few herbs and vegetables in ye water gives a very nice flavor to the fish. dd, according to taste, a little sliced onion, thyme, bayleaf, winter savory, carrots, celery, | cloves, mace, using whichever of these ingredi- ents you oan procure; it greatly impreves skate, fresh haddock, gurnet, &co. Fresh water fise, which have no particular flavor, are | referable done thus, with the addition of a | ‘ittle vinegar. Choose whatever sauces you | please for any of the above fish. TO BAKE SQUASH. To bake well. it needs not only to be baked | done, but a contiruation of gertle heat long enough to evaporate its juices, leaving all its sugary sweets just right to tempt the palate. | Unlike the potato, itis not best baked done | ick, and no longer than until done, but is far better for being dried after baking. QUINCE AND APPLE JELLY i Cut small and core an equal weight of tart apples and quinces; Rat the quinces in a pre- serving kettle, with water to cover them, and boil till soft; add the apples, still keeping water to cover them, and boil till the whole is nearly a pulp; put the whele into a jelly bag, and strain with ut pressing. 17" Horace Greely bas been suffering from an attack ef brain fever.
