Inthat lecture Prof. Haines says: “The spparently popular idea that this article is dedeterious and even poisonous is a pure fal- Jaey. ITn the first place, how far has the Professor sliown this statement to be true? Prof. Mariner tells us (see Congressional mport, No. 199, House of Renreseumuvesl Feb, 4, 1881): I have exawined several sirups made essentially entirely of glucose ‘and found in them chlorides of "tin, calcium, jron, magnesia, and in quantities which made thewn very poisonous.” 3 Prof. Charles B. Fletcher, chemical Ject- wrer t0 Boston University, and State As- gyer of Massachusetts, states that be has recently analyzed three samples of the best solid glucose, and two samples of the sirups, grades A and B, and in every sample foun free sulphuric acid. Inone sample of best glucose e found thirty grains of oil of vitriol (sulphuric acid) to one pound of glucose. In asample of best sirup he found nearly as much. (See above Congressional report.) Prof. Kedzie, of the Michigan University, found in one sampie of glucosesirup 141 grains of oll of vitroil and 724 grains of lime o the gallon, and in another, which had caused serious sickness in a whole family, seventy-two grains of oil of vittiol, twenty- eight grains of copperas, and 863 grains of lime to the gatlon. (Ibid.) . Dr. T. D. Williams states that in various ssuples of glucose sugar and sirups he has found quantities of free sulphuric acid. (Ibid.. A Philadelphia procer states that *“ sugars sresold so full of acid that when a barrel is fm‘e;i it would almost suffocate you.” i : A confectioner in this city says he has had abatch of candy spoiled from the action of the sulphuric acid in the sugar on the vessels in which it was melted. And yet Prof. Haines in his lecture tells usthat“chemits who claim that sulphuric acldin a free state hasbeen found in glu- cose do not know their business. Suppose these gentlemen thus accused of ignorance hould repiy to the Professor that not one of his propositions which I have quoted are sclentific facts; that is, have been proven as such, and that therefore he was hardly war- ranted in coming to a conclusion in regard to their chemical Knowledge from such data; =nd that they should return _the same charge asto his own knowledge of the profession. Would they not be warranted in doing so ? Further, we are told that glucose is com- Eosefl of precisely the samne elements, ydrogen, oxygen, and carbon, as cane sugar, “though in_ slightly different quanti- tes” and the inference is that they are taerefore alike,— WHOLESOME ARTICLES OF FOOD. The Professor is_sometimes called asa ‘witness in a court of justice in poison cases. Suppose one of these should be a case of oisoning from strychnine, and that heshould find several grains of the drug in the stow- sch under examination. He is asked, “ Was death produced in this case by the white powders found in the stomach?’ He re- plies, “Certainly not. This substance is teslkaloid strychnine. 1t is composed of arbon, .hydrogen, nitrogen, and oxygen. These are precisely the same elements which constitnte the substance, gluten, which goenomake up a lnri;a proportion of the read we eat.” It will be seen that both substances are composed of precisely the same elements, “though in slightly different Quantities,” and, inasinuch as gluten is thus largely used for food, and known to be ¥holeésome, and that strychnine is made up of precisely the same substances, it must be therefore alike wholesome, and could not bave caused death in this case. Further, the disof lemon, orange, tolu, savin, ete., are Precisely alike chemically, each made up of carbon, ten parts, hydrogen, sixteen. The first three are comparatively harmless sub- 8tances, the last, oil of savin, is an active Raison. The works on medical jurispru- dence mention cases of death from this sub- stance. On his cer- tificate he says: *1 find nothing more poi- sonous than the usual consiituents of gin, Saveand except glucose and lime 23 stated Thus it will be seen that there are grave Teasons for suspecting that elucose is o poi- son (per se), even when pure, Drs. Nesler and Barth taking pains to obtain a pure arti- cle for their experiments, and that the re- sultant of fermentation of the substance is also poisonous. As says Dr. Nesler: * There can be no doubt that a substance injurious to health remains in the lquors made by fer- menting this sugar.” 3 Thus it will be seen I think that there is proof positive that free sulphuric acid is frequently found in glucose; that suiphate of lime is not an_innocent article of food; that we cannot infer the action of one sub- stance upon the living system on account of its chemical analogy to another. And fur- ther, that there is pretty good reason to he- lieve that glucose is not a very valuable and nutritious artlele of food, and that Prof. Haines’ conclusions as stated in his lecture caunot be Iooked upon as fully established. . Division-st. acld 1S used 1n its manufacture, but because, cheuically speaking, its constituents are tue same in both, and are present in precisely the sume quantities as found in the natural product, or in that product produced by nature during the process of digestion when non-nitrogenous matter is converted into saccharine matter. In response to the de- fense set up by Prof. Huines it is suflicient, at least it is to the point, to say in brief that the two processes differ; that one is a nat- ural product and is found to result because of certain chemical changes_ oc- curring in both vegetable and animal life, and this too, without the neces- sity for, or in the presence of, either free sulphuric acid or the carbonate of lime, and that the other is simply an artifice,—a base imitation of the former, created by the chemist for unscrupulous men. . Certainly, the manufacture of glucose with intent to benefit man, otherwise than his pocket, is not stimulated by the desire to usurp nature, ‘The chemical use of glucose inthearts, first inereased a demand for it, when an idea was conceived.to substitute ils use for that of canesugar. This act was stimulated by monetary wmotives. Notwith- standmg the fact that glucose posseses less than 50 per cent of saccharine sweetness, as compared with cane sugar, it was introduced as cane sugar, being mixed with it in the |- form of grape (?) sugar, an act which is frandulent, as such addition is an adulterant, and it was and still is thus soid for cane sugar. 2 : In proportion to the amount of sweetness, glucose is uo cheaper than cane sugar, while in point of nutritition it is proportionally less valuable. Why Prof. Haines has_stated that this artificial produet **went directly into the circulation throughout the body, givine it flesh and strength,” a remark which is unquestionably based” upon the absorption of the natural product, which is either made within or introduced into the animal body from without, as the constituent of veget- able or animal food, I cannot say. I can only say, or rather can only ask, in the name of the public good,. that the Professor will either qualify his ‘assertion, or else that he will give us dnm} hat the -question of wholesomeness of this artificial product, fil\:fose or grape sugar, may be forever set- e In reference to the statement made by the Professor_relative to the effectof frec sul- phuric acid found in grape-sugar and glu- cose, upon that product itself, destroying its commercial value, coloring it, ete., 1 must suy that wy experience differs. When thor- oughly bleached, and the starch well elim- inated or converted over into inverted sugar, if the product is treated with chemically pure sulphuric acid or with ~ commercial sulphuric acid, in concentrated form, fora period of many hours, no change in color is manifest, but the product remains as before unless brought into contact with some other substance. So common isthe presence of free sulphuric acid in glucose and. %xugose sirups and in grape sugar,that much difficulty is alleged: to have occurred amony: the candy manufactur- ers in securing an article that would not at- tack their kettles. This:is particularly true of grape sugar and the slucose sirups. That the quantity varies in the higher grades, and is_in some instances almost ‘whoily extracted, is unquestionably true; in fact, the acid is so thoroughly removed that its detection, ir present, is Imrdl{ ‘}1 T. Haines, asreported in your paper of last'Sabbatl, takes.strong ground in favor of glucose as a safe and healthful article of food, and as costing only two to four cents a pound, yet “fully half as sweet as pure cane sugar.” ‘The Professor is at the head of the chemi- cal department of Rush Medical College, of this city, and ought to be good authority. If this be correct it is no wonder that capi- talists are arranging to build still another glucose manufactory in Chicago. Everybody hopes the statements made are true, but if they are not true some one has taken a great responsibility, Will Prof. Haines be govd enough to state whether his conclusions were formed from the results_of experiments made by other persons or from examining samples furnished him by interested parties, and let the public know the foundation upon which such con- clusions rest ? CrrizEN. \ NUTRITIOUS FOOD. ‘The names of Prof. Horsford and the Rum- ford Chemical Works (Providence, R. L) have become so identitied with the maunufact- ure and sale of phosphoric acid and the phos- phates that they are justly considered as the highest authorities in this country, if not in the world, upon those articles. . The former (Frof. H.) has made the sub: jeet of wheat and its conversion into bread a life-long study, and was the first to-suggest the use of the phosphates as a cream tartar substitute, whereby the nutritious elements which are taken from the flour in bolting are restored. ‘The phosphatic preparations of the above firm have received the hearty recommenda- tions of the highest medical’ and chemical authorities in thisand other countries, so that their healthfulness and utility are be- yond question. They have been put upon the mnarket in various forms, the latest, and one which will undoubtedly prove the most popular, being “ Prof, Horstord’s Phosphatic Baiing-Powder,” which is packed in tin cans like the ordinary baking-powders, and s to be used in the same way.
