New York has its great stock exchange, grain exchange and probably) not so well known, its coffee exchange. Here is the great center where the world’s dealings in coffee aré carried on. Samples from far away—East Indies, the islands of Java, Porto Rico and from South America assemble. The coffee exchange establishes standards by which the world’s buyers and sellers determine grades. There is no guess work about the grade of coffees but there is the greatest element of judgment in the qualit) of various types of coffee. The coffee exchange determines grades. The coffee buyer determines values due to flavor, fragrance and nuttiness. F There are eighteen different varieties of green coffee and eight different- grades. Coffee is a product handled by only the expert. Expert buyers visit the various coffee growing countries. Experts at the warehouses of New Orleans and New York pass judg- ment on the gradings of various cargoes that arrive. ‘ But the expert buyer, the blender, the final assayer of * the finished coffee for your table, is the final buyer_who selects and roasts your coffee. in communication | orms and blanks of | t service. | oot edialeh Beene = Work on the high school annual is | + Progressing very well and the publica {tion is expected to be out the latter * part of this month.
