They are found in .meats, eggs, milk and certain vegetables, like beans, peas, lentils and nuts. Second, the ‘carbohydrates, whose function is chiefly to pro- vide fuel and energy. They are found in two of the ordinarily used food stuffs—the starches such as bread, cereals, rice, po- tatoes, ete.; and the sugars, which are found in the juices of various plants, in honey, etc. Third, fats, whose function is chiefly to furnish fuel. The chief sources of fats are cream, the fat of meats, many nuts, ete. Fourth, the minerals and or- ganie acids, which are essential to the body. These are found in many vegetables and certain other foods, particularly in milk and the yolk of eggs. % Certain other principles have been discovered in recent years, among the chief of which are sub- stances called vitamins, These are absolutely..essential to well-being. They are found in fresh food of all kinds, like meats, yolk of eggs, peas, beans, various vegetables and fruits. They are destroyed by some of our methods of prepara- tion of food. For example, steri- lized milk and sterilized canned foods are in large part deprived of ‘these vitamins. We can also take them away from vegetables, like rive, by a high degree of polish- ing, which has been largely: prac- ticed. ‘Babies fed on sterilized milk sometime develop scurvy. This can be prevented by feeding a tablespoonful of orange juice once a day. People should not worry too much about their eating. Those who are underweight, or are engaged in heavy muscular labor, should inerease the starches, fats and sugars. Red Ant Killer. Did you ever hear of a house- hold that didn’t have an ant rem- edy? How many of these Same households are not looking for a. remedy that will really work? |. Haseman of the Missouri Agricul- tural Experiment Station has been giving special attention to the lit- tle red ant that usually causes more trouble than any other and, has been able to kill it with the syrup made from half a pound of sugar and a fortieth of an ounce of sodium arsenite. The syrup should be made in a double boiler because if it is scorched the ants will not eat it and the poison must be carefully weighed by the drug- gist and no more than this must be added for two reasons. (1) It is a deadly poison and will be more likely to be dangerous to animals or persons-who get it by mistake if less diluted. (2) If any more of it is used, the ants detect the taste and will not eat it. Professor Haseman says that the ant has a very keen sense of taste and is a most contrary creature re- fusing to eat many of the things usually used in trying to get rid of him. In fact:-he finds that the lit- AGRICULTURE DAY AT THE CHAUTAUQUA Prof. J.W. Henceroth to Give “Science and The Soil” Lecture on Sixth Day. This picture shows the way the stage will look for the ‘‘Science and the Soil’’ Lecture-demonstra- tion at the Chautauqua on the sixth afternoon. This lecture-demonstration is to be given by Prof. J. W. Henceroth, a soil expert and agricultural scientist. He is one of the newer types of Chautauqua lecturers, and will be just as interesting in his way as the orators are in theirs, ; Besides, Prof, Henceroth will do a lot of practical good. - - “Seience and the Soil’’ will be the subject of his lecture-demonstration. . He will talk about some of the WHYS of Farming and discuss managing the soil for profit; why some soils retain moisture while others do not; What. does lime do for a soil? How do fertilizers help? and any number of others. The Chautauqua wants to serve the people of this community. It wants to bring town and country together and make a great community of interest. Prof. Henceroth is coming to thrash out some of the problems of farmers and merchants and try to make a better understanding all around, and at the same time point the way for bigger crop? for the farmer. Whatever your interests—whether merchant, farmer, teacher, pupil—if you are in any way inter- ested in the production of good crops you will get pleasure and profit from the lecture.
