Within the limits of 70 to 90 degrees, the variation in the loss of fat in the «kim milk is not very marked, but the loss is greater at the lower temperature. An in- crease in the per cent of fat in the cream brought about by a lower tem- perature of the milk separated, is caused by’ the higher velocity of the cold cream reducing the capacity of the cream outlet.
