The meat should be kept in a cooi place, and after being smoked should remain in a dark smokekouse, a heht smoke being given occasionally. Cured 1n this way the meat is not so hard as by the dry-salting plan, even when the same ingredients are used. Nevertheless many persons prefer dry-cured hams, and especially dry cured bacon. H.N.
