Francis Cornish of Drake spent a week visiting Florence Sherman, | _Today’s Recipe Refrigerator Date Cookies (Makes 4 dozen cookies) Y One-half cup butter, % cup white sugar, % cup brown sugar, 2 eggs, 2 cups general purpose flour, % tea- spoon soda, 1 teaspoon baking pow- der, % teaspoon salt, % teaspoon vanilla extract, % pound dates (chop- ped), % cup water, 1 tablespoon lemon juice. Cream butter and add brown sugar and % cup white sugar. Add eggs one at a time, beating after each ad- dition, Mix and sift all dry ingred- jents and add. Blend thoroughly. Add vanilla extract. Make up into a ball and chill in ice refrigerator. Combine dates, the remaining % cup sugar, water and lemon juice, and cook until thick. Cool. Then remove dough from refrigerator, di- vide dough into two parts and roll out to % inch thickness; spread with date filling, and roll up like a jelly roll, Return to modern ice refrig- erator and chill thoroughly. Then slice % inch thick, and bake in a moderately hot oven (375 degrees) tor approximately 12 minutes. (4 to 6 servings) One cup butter, 4 eggs, % cup con- fectioner’s sugar, 1 small can crushed Pineapple, 30 ladyfingers, % cup cream, % teaspoon vanilla, % tea- spoon almond extract, % cup mara- Schino. Cream butter until fluffy. Grad- uslly add sugar and cream again until mixture is light. Beat egg yolks sep- arately, then add to the sugar mix- ture. Beat in thoroughly, then add maraschino and crushed pineapple. Beat egg whites until stiff and dry, then fold into pineapple mixture. Split ladyfingers. Butter mold. Fill mold with ladyfingers and pineapple mixture, alternating half ladyfingers in layers with mixture in layers. Place in refrigerator and chill for 24 hours, Serve garnished with candied cherries and whipped cream. It’s a feast day dessert. Blackberry Roll (An old-time favorite) 2 cups flour, 4 teaspoons baking powder, % teaspoon salt, 5 tablespoons fat, 2/3 cup milk. Mix the dry ingredients. Cut in the fat and slowly add the milk. ‘When a soft dough forms pat it out until it is a third of an inch thick. Spread with blackberries and roll up quickly. Fit into a greased loaf pan (a glass one is preferred). Bake 30 minutes in a moderate oven. Unmold and serve with cream or hard sauce, Blackberries 2 cups berries, 3 tablespoons flour, % cup granulated sugar, % teaspoon cinnamon, % teaspoon grated lemon rind, 3 tablespoons butter.
