Mix well and serve immediately with broiled bacon or sausages, Mustard Pickles (Good All Year) 4 cups chopped ripe cucumbers, 4 cups chopped green cucumbers, 4 cups chopped onions, 4 cups chopped green tomatoes, 4 cups shredded green peppers, 1 large cauliflower, separ- ated, 2 quarts cold water, % cup salt. Prepare vegetables and place in separate bowls, cover with the water and salt. Soak over night. In morning drain and scald each, allowing water to stand over vegetables 10 minutes. Drain and add sauce. Mustard Sauce 1-3 cup white mustard seed, 1 ta- blespoon tumeric, 2 tablespoons yel- low mustard (ground), 1-3 cup celery seed, 2 cups sugar, 1 1-3 cups flour, 1 cup water, 8 cups vinegar. Blend seasonings with sugar and flour, add water and part of vinegar, mixing to prevent lumping. Add rest of vinegar and cook 5 minutes. Add prepared vegetables and simmer 30 minutes, Stir frequently. Pour into sterilized jars and seal. Cucumber Salad Cups Cucumber cups are salad holders with a dash and a flair that will in- trigue your family’or ‘guests. And here is how you make these clever little cups! First, select “tubby” cu- cumbers. Then cut each cucumber in half, which provides forthe mak- ing of two salad cups. Cut off the rounded end of each cucumber half in order to make a firm base for the cup and scoop out the center. Then peel the cucumber in narrow strips down to within an eighth-of-an-inch of the bottom. Put the cucumber cups in a. bowl of iced water and place in refrigerator to become cruled and crisped . If the cucumbers have been previously stored in a refrigera- tor they will be crisp and fresh when peeled and it will, therefore, be nec- essary only to leave them in the ice water until the “petals” are curled. When the cucumber cups are ready fill them with a mixture of the scooped-out cucumber, flaked salmon, sliced hard-cooked eggs, and diced sweet pickle.
