GOLDEN SALAD DRESSING 1 tablespoon butter 2 tablespoons lemon juice 1-3 cup orange juice % cup sugar 2 egg yolks % cup whipped Melt the butter in top of double boiler; add the fruit juices, sugar and slightly beaten egg yolks. Stir over hot water till thick. Fold in whipped cream just before using. BUTTERSCOTCH PIE FILLING Three egg yolks, 1 cup brown sugar, 6 tbsp flour, 2 cups milk, 4 tbsp but- ter, 1 tsp vanilla, % cup salt, 3 thsp caramel syrup, % nutmeg. To make caramel syrup, heat % cup sugar in smooth dry skillet un- til golden brown; add boiling water and cook until creamy. Beat the egg yolks with the sugar; mix the flour with a little water to make a smooth paste and add to the egg mixture. Stir in the milk, salt and caramel syrup and cook mixture in double boiler until thick. Remove from fire and add butter and flavor- ing. Add the hot water to the paste and cook until thick, stir- ring constantly. Remove the beets from the vinegar and add the vinegar to the sauce. Pour the sauce over the beets and reheat before serving.
