Davies. a a f” Today’s Recipe i ° Rolled Flank Steak One flank steak, 1 teaspoon mus- tard, 2 teaspoons salt, 1 teaspoon su- gar, 3 tablespoons vinegar, 2 cups coarse stale crumbs, 4 tablespoons melted butter or meat drippings, 1 tablespoon minced onion, 1-2 tea- spoon pepper, 2 tablespoons hot water. Make a paste of mustard, 1 tea- spoon salt, sugar and vinegar. Spread meat with this paste, cover with the stuffing and roll like a jelly roll. Do not roll too tight to have room to ex- pand. Bind securely with a soft cord, dredge with flour and bake 2 hours in a moderate oven. To make the stuffing mix 1 tea- spoon salt, onion and pepper with bread crumbs, melt the fat in the hot water and pour over crumbs. Cover and let stand 5 or 10 minutes. Mix lightly with a fork, keeping the stuff- ing light. The mixture should be just moist enough to hold together, but not sticky or pasty.
