Roquefort Cheese is especially recommended. However, any type of cheese may be used. First, wash, scrape and cut the celery in two-inch pieces. Now work one tablespoon of butter until it becomes creamy, add two tablespoons of cheese, and stir until thoroughly blended. The mixture should then be highly seasoned with Texaco Salt and Paprika. Spread on ibe, lade an the celery stalks and serve, if possible, on @ bed of finely chopped ice. ‘Texaco Salt ts suggested because its purity permits it to be more quickly dissolved and thoroughly absorbed by the cheese and celery.
