This is the third request of this nature receiyed at the dairy commissioner's officejin the last ten days: ‘The extremely high price of cheese, which now wholesales at 22 to 23 cents, accounts for the un- usual interest ip-this:industry. While an average of 4% pounds of butter, selling at 35 cents, may be produced from 100 pounds of milks, ten to twelve, pounds of cheese, worth on an average of 22% cents, May be produced fromthe same quan- tity, and the profit’on cheese at pres- ent prices is mucBthe greater. North Dakota has one genuine Swiss cheese factory, operated by. a Switzer, and utilizing milk furnished by Swiss cows.
