One pound of air slaked lime added to cooled, boiled water is equally as good a preservative for eggs as water glass. Only clean, fresh eggs with sound shells should be “put down.” Use an earthen jar. Stir the lime thoroughly into the water and drop the eggs in a3 gathered. Some lime settles to the bottom of the jur but does no harm. Two or three inches of the solution should cover the eggs to allow for evaporation. Keep in a cool place, preferably in a cellar. Eggs preserved by this method may be safely kept for eight months. When ready for use, remove only the eggs Oversupplied.
