At one time sea water was used in some English es when nuak- ing bread. along the coast line of France utilize it. Fresh rain or spring water is only used for the leaven, pure water being exelu- sively employed for the making and mixing of the dough. By this method no mineral or table salt requires to he added, the nitural salt water giving the bread the necessary degree of sa- linity. But, though s water does ad- mirably for breadmaking, when ap- plied to other culinaiy purposes the result is a disagreeable failure. The wheaten. bread produced by if, how- ever, Is excellent and of great hygienic value. The chloride of magnesium, which imparts the acrid taste to sea water, is decomposed in the heating and therefore does not convey its origi- nal disagreeable taste to the bread, while the common salt, of. course, per- manently retains all its characteristic saline “ properties. The mineral sub- stances left in the baked bread are con- sidered to be of the nature of very mild regulating medicines.—London Mail. She Snubbed Napoleon.
